Easy Dinner: Black Bean Blender Soup

Health Tuesday white erShort on time?  Just don’t feel like cooking? But wanna keep it healthy?  If you have a blender – and a few ingredients – you have a meal!

Here’s how you can make black bean soup in a blender!

Heat about 1 cup of water in your kettle (or microwave) to near boiling.

While waiting …

Layer the following ingredients in your blender:

Black Bean Blender Soup

  • a can of whole corn
  • a can of black beans
  • a can of diced (or stewed) tomatoes
  • a sprinkle of corn meal or tortilla chips (oh, about 3 TBS corn meal, or a healthy handful of chips)
  • drop in a chicken bouillon cube.
  • pour the hot water in.

And don’t forget a handful of fresh cilantro!!  (You can use dried, or leave it out if you prefer.  But for our taste buds, it ain’t black bean soup ‘til we add cilantro!)  Smile

Blend on low, if you like it chunky.

On high, if you like it smooth.

A little of both, if you like it somewhere in the middle.

To round out the meal, make a package of cornbread or if you have the dough in the refrig, pop some Five Minutes a Day Bread in the oven a half an hour before you start heating the water!

Easy beansy!  Enjoy!  And tell me about it!

REALITY CHECK:  Just because the doctor doesn’t have the perfect solution, we shouldn’t not do what we can do – even if some people, including ourselves, don’t understand.   “Do what you can, with what you have, where you are.”   (Eleanor Roosevelt?)
