Here’s how you can make black bean soup in a blender!
Heat about 1 cup of water in your kettle (or microwave) to near boiling.
While waiting …
Layer the following ingredients in your blender:
- a can of whole corn
- a can of black beans
- a can of diced (or stewed) tomatoes
- a sprinkle of corn meal or tortilla chips (oh, about 3 TBS corn meal, or a healthy handful of chips)
- drop in a chicken bouillon cube.
- pour the hot water in.
And don’t forget a handful of fresh cilantro!! (You can use dried, or leave it out if you prefer. But for our taste buds, it ain’t black bean soup ‘til we add cilantro!)
Blend on low, if you like it chunky.
On high, if you like it smooth.
A little of both, if you like it somewhere in the middle.
To round out the meal, make a package of cornbread or if you have the dough in the refrig, pop some Five Minutes a Day Bread in the oven a half an hour before you start heating the water!
