Dairy-Free Broccoli Blender Soup

 

 

Broccoli for Blender Soup

Summertime is Easy Season when it comes to meals with food allergies.

And very little is easier than a blender soup.

 

First

Chop a head of broccoli into chunks.

 

Chunked Broccoli

Then

Toss broccoli in a soup pot with 2 cups of water and a bouillon cube of choice.

Heat

Cook on medium high, with a lid, for about 15 min.   Lid removed for your viewing pleasure:

Heatin' It Up

Cool

Let cool about 5 minutes.

Pour

If you aren’t sure if your blender can handle the heat, let the broccoli mixture cool longer.

Add

Add 1/4 cup safe milk substitute powder – we use DariFree.  (This isn’t an affiliate link, just a love-the-product link.)

Broccoli, No Dairy

Blend

Turn blender on low for less than a minute.  Just long enough to get things mixed up, but still retain broccoli dots.

Blender Soup's On!

Serve

Serve in mugs or bowls.  I prefer my soups in a mug or tumbler.  My mama served it that way, my daddy served it that way, I like it that way.  🙂

 

REALITY CHECK:  The creation of this blog post took longer than the making of the soup for today’s lunch.  I’m gonna go now, so I can have my Blender Soup while it’s still warm!  🙂
