When our brains are busy, everything else seems to stop. That can be a good thing as we can be distracted through creative processes (like crocheting), but it can also be unhealthy. Especially when it involves our desire – and need – to eat healthy.

That’s why I started making Funky Lunches.

Funky Lunches are simple meals I can toss together in between writing words, photography practice, graphic design, and all the other morning-to-early-afternoon activities I like to engage in.

Here’s my latest excursion:

Couscous & Dried Fruit Salad

This is incredibly adaptable, so don’t limit yourself to what just happened to be in my pantry. Toss in whatever floats your dried or fresh fruit boat.

What it takes:

  • Couscous
  • Dates
  • Chopped apple
  • Dried cranberries
  • A wee bit of honey
  • Salad dressing (I used Kraft’s Zesty Lime)

How to make it:

Cook your couscous according to package directions.

Typically, I just boil twice as much water as couscous I plan on using. Add the couscous to the boiling water, cover, turn off heat, and blog a bit.

Be sure to set a timer AWAY from your desk for about 10 minutes, so you remember to come back and eat.

If I set a timer AT my desk, it’s too easy to turn off the timer and still forget to eat.

Toss in your fruit – fresh chopped or dried.

Drizzle a little bit of honey. I used the very last bits of our honey jar and it was just enough.

Add a splash of salad dressing.  I like the citrusy zing of Kraft’s Zesty Lime. But a squeeze of fresh lime juice, a dash of olive oil and a sprinkle of salt would be just as tasty, I think. Especially with that honey.
